Many people will add flavoring herbs such as sage, rosemary, thyme and/or savory, among others.  A tablespoon or two of apple cider vinegar will not alter the flavor but will help to draw more minerals out of the bones while boiling.

The outcome is a liquid that is enriched with easily digested vitamins, minerals, gelatin and amino acids. It can be stored in the refrigerator or frozen to keep portions for later use.  While many people use it as a soup base, others enjoy sipping it.  When cold, it will become a gelatinous semi-solid, though it melts and liquifies when heated.
